What to Eat When It's Too Hot to Cook

It's too hot inside and outside to cook, and I'm thinking that little bag of frozen shrimp (gluten free of course) needs to be thawed in the fridge now for an easy dinner. I'm tossing it with gluten free tamari, some grated ginger (I keep a peeled knob of ginger in a baggie in the freezer) and salt, pepper and lemon and off it goes to join the butter lettuce from my soon to wilt garden. Drizzle of mild oil and we're good to go. Maybe I'll get crazy and add a hard boiled egg.
